- In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring between each until smooth.
- Once melted, add lemon juice and lemon zest to the chocolate. Stir until fully combined and smooth.
- Place the mixture in the refrigerator for about 15-20 minutes, or until it firms up enough to scoop.
- Using a small cookie scoop or your hands, form small balls from the mixture and roll them gently to smooth out the edges.
- If desired, roll each ball in powdered sugar for a sweet finish.
- Place the truffles back in the fridge for about 10 more minutes to set completely.
Notes
Ensure your bowl is completely dry when melting chocolate, as water can cause it to seize. Use fresh lemon juice for a vibrant flavor; bottled juice won’t provide the same freshness. If the mixture is too soft, chill it longer before rolling.
