Ingredients
  

For the base
  • 16 ounces 16 ounces cottage cheese Use full-fat or low-fat, small-curd for a smoother texture.
  • ¼ cup 1/4 cup honey Use runny honey for easier mixing.
  • ½ teaspoon 1/2 teaspoon pure vanilla extract Enhances flavors.
  • ¼ teaspoon 1/4 teaspoon fine sea salt Used inside the base.
For the mix-ins
  • 3 pieces 3 pitted dates, roughly chopped Use Medjool for softer pieces. Soak if dry.

Preparation
  1. Prepare your pint container and ingredients.
  2. Blend the base ingredients (except the dates) until smooth.
  3. Transfer to your Ninja CREAMi pint and freeze for about 4 hours or until fully solid.
  4. Thaw briefly before processing for 10-15 minutes at room temperature.
  5. Process in the Ninja CREAMi on the 'Lite Ice Cream' setting.
  6. Add the chopped dates and use the 'Mix-In' feature to distribute them evenly.
  7. Serve immediately with a sprinkle of flaky sea salt.

Notes

Store leftovers in an airtight, freezer-safe container. Best consumed within 1–2 weeks. For serving, consider topping with fruit or nuts for added flavor and texture. Adjust honey for sweetness based on the sweetness of the dates.
