  • ½ cup cottage cheese Use small-curd or regular cottage cheese; pulse in a blender for a smoother batter if using large-curd.
  • 1 unit egg Large egg.
  • ½ cup oat flour Make your own by grinding rolled oats or use store-bought.
  • 2 tbsp honey Natural sweetener.
  • ½ cup fresh blueberries Halve larger berries; use frozen straight from the freezer if preferred.
  • 1 tsp baking powder Leavening agent.
  • 1 pinch salt Enhances flavor.

Method
 

Preparation
  1. Preheat your air fryer to 350°F (175°C) and lightly grease the basket.
  2. In a mixing bowl, combine cottage cheese, egg, honey, and a pinch of salt. Whisk until fairly smooth.
  3. Stir in oat flour and baking powder until just combined. Avoid overmixing.
  4. Gently fold in fresh blueberries or frozen berries, taking care to not overmix.
  5. Use a small cookie scoop to form rounded balls and place them in the air fryer basket, leaving space for air circulation.
Cooking
  1. Air fry for 8–10 minutes, turning halfway if necessary, until golden and springy.
  2. Let cool slightly before serving.

Notes

Store leftovers in an airtight container for up to 48 hours. Reheat in the air fryer or microwave. Freezing is recommended to extend shelf life.
