Method
 

Preparation
  1. Wash the potatoes thoroughly to remove any dirt. Cut them into roughly one-inch cubes and place them into a large mixing bowl.
  2. Drizzle the extra virgin olive oil over the cubed potatoes. Add the grated Parmesan cheese, garlic powder, dried parsley, salt, and pepper to taste. Stir until the potatoes are nicely coated.
Cooking
  1. Transfer the seasoned potato cubes into the air fryer basket in a single layer for optimal air circulation. Cook at 375°F (190°C) for approximately 30 minutes, shaking the basket halfway through.
  2. Check that the potatoes are golden and crispy on the outside while remaining soft inside.
Serving
  1. Transfer the finished Air Fryer Garlic Parmesan Potatoes to a serving dish and garnish with additional parsley if desired.

Notes

If you have leftovers, store in an airtight container in the refrigerator and reheat in the air fryer for crispiness. To make ahead, prep the potatoes and coat them, storing in the fridge for a few hours before air frying.
