  • 1 tablespoon ground cinnamon
  • 1 tablespoon sugar (optional — can be omitted for a naturally sweet snack) For sweeter chips.
  • 1 juice Juice of 1 lemon Prevents browning and adds brightness.

Method
 

Preparation
  1. Preheat the oven to 200°F (95°C). Use an oven thermometer to confirm the temperature.
  2. Thinly slice the apples using a mandoline or knife, aiming for 1/16 to 1/8 inch thickness for even drying.
  3. In a bowl, toss the apple slices with lemon juice to coat them lightly.
  4. Arrange the slices in a single layer on a baking sheet lined with parchment paper.
  5. Sprinkle cinnamon and sugar (if using) over the slices for flavor.
Baking
  1. Bake for about 1–2 hours, flipping halfway, until the apples are dried and crisp.
  2. Check starting at 45 minutes and remove any chips that are done to prevent burning.
  3. Allow to cool on a cooling rack to maintain crispness.

Notes

For the best results, keep slices thin and evenly spaced while baking. Store completely cooled chips in an airtight container.
