Preparation
  1. Preheat your oven to 350°F (175°C) if you prefer a warm sandwich.
  2. Slice your croissants in half horizontally and place them on a baking sheet.
  3. Mix the softened goat cheese, honey, and cinnamon in a small bowl until well combined.
  4. Spread the goat cheese mixture evenly on both halves of the croissants.
  5. Layer the thin apple slices generously over the goat cheese.
  6. Add a handful of fresh arugula on top if desired.
  7. Close the sandwich and place it in the oven for about 5 minutes, just until warmed and slightly toasted. Alternatively, you can enjoy it cold.
  8. Slice in half and serve immediately for a tasty delight.

Notes

For a richer flavor, consider using herb-infused goat cheese. Stale croissants won't provide the same delightful texture. For an extra crunch, add some chopped nuts like walnuts or pecans.
