Gnocchi
  • 1 pound potato gnocchi (fresh or refrigerated) Frozen works too—cook straight from frozen according to package directions.
Onions and fat for cooking
  • 2 large yellow or sweet onions, very thinly sliced Use yellow for the richest flavor; alternatively, white or sweet onions will work.
  • 3 tablespoons unsalted butter or neutral plant-based butter Use for a dairy-free option.
Broth and aromatics
  • 4 cups low-sodium vegetable broth or beef-style stock Use low-sodium to control salt levels.
  • 1 teaspoon dried or fresh thyme leaves Fresh thyme gives a brighter, herbal pop.
  • Salt and freshly cracked black pepper To taste.
Cheeses
  • 1 cup shredded Gruyère Substitute with Emmental or a mild Swiss-style cheese if unavailable.
  • 1 cup shredded mozzarella Whole-milk mozzarella melts better; part-skim is fine for a lighter bake.
Finishing touch
  • Fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Prepare a 9x13 baking dish.
  2. Melt 3 tablespoons of butter in a large skillet over medium heat.
  3. Add the thinly sliced onions and a pinch of salt. Stir to coat.
Caramelization
  1. Cook the onions, stirring occasionally, for about 20 minutes until deeply caramelized and golden brown.
Combine Ingredients
  1. Pour in 4 cups of broth and add 1 teaspoon of thyme. Simmer briefly.
  2. Cook the gnocchi in a large pot of salted boiling water according to package instructions. Drain well.
  3. Combine cooked gnocchi with the onion mixture in the baking dish.
Bake
  1. Sprinkle the cheeses over the top. Bake for 20 to 25 minutes or until bubbly and golden.
  2. Let the dish rest for 5 minutes, garnish with parsley, and serve.

Notes

For best results, freshly grate the cheese and let the dish rest before serving. You can add spinach or mushrooms for additional flavor and nutrition.
