  • 4 pieces boneless, skinless chicken breasts If thick, consider butterflying or pounding to even thickness (about 1/2–3/4 inch).
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (plus extra for greasing)
  • ¼ cup balsamic vinegar Use good-quality for richer flavor.
  • 1 tablespoon honey or maple syrup Honey adds floral notes; maple syrup gives a deeper caramel nuance.
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved Roast beautifully and burst with juice.
  • 1 cup shredded mozzarella cheese Freshly shredded melts best.
  • Fresh basil or parsley for garnish (optional)

Method
 

Preparation
  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
  2. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
Prepare the Balsamic Sauce
  1. In a small bowl, whisk together balsamic vinegar, honey or maple syrup, dried basil, dried oregano, and minced garlic.
  2. Optionally blend for a smoother glaze.
Sear the Chicken
  1. In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and sear for 2–3 minutes per side.
  2. Transfer directly to the oven if using an oven-safe skillet; otherwise, place in the prepared baking dish.
Bake and Finish
  1. Assemble by pouring balsamic mixture over the chicken and scattering cherry tomatoes.
  2. Bake for 20–25 minutes until chicken is almost done.
  3. Remove from oven, add mozzarella, and bake for an additional 5–10 minutes until cheese is bubbly and internal temperature reaches 165°F (74°C).
  4. Let rest for 3–5 minutes and garnish with fresh basil or parsley before serving.

Notes

Store leftovers in an airtight container for 3–4 days. For freezing, cool and store in a freezer-safe container for up to 2–3 months.
