- In a mixing bowl, mash the ripe bananas until smooth.
- Add the rolled oats, peanut butter, honey (or maple syrup), and cinnamon. Mix until everything is well combined.
- If desired, fold in the mini chocolate chips and chopped nuts or seeds for extra texture.
- Using your hands, roll the mixture into small balls, about 1 inch in diameter.
- Place the energy balls on a baking sheet or plate and refrigerate for at least 15 minutes to help them firm up.
- Enjoy right away or store them for later!
Notes
Avoid over-mixing to keep the texture nice and chewy. These energy balls pair wonderfully with a glass of milk, a cup of yogurt, or even a smoothie.
