- Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan.
- In a large bowl, mash the ripe bananas until smooth.
- Add the rolled oats, peanut butter, honey, vanilla extract, cinnamon, and salt. Stir until combined.
- If you’d like, now’s the time to mix in chocolate chips or nuts.
- Pour the mixture into the prepared baking pan and spread it evenly.
- Bake for 20-25 minutes, or until golden brown on top.
- Let the bars cool in the pan before cutting them into squares.
Notes
Make sure your bananas are very ripe; the riper they are, the sweeter your bars will be. Don’t over-mix the batter; just combine the ingredients until they are evenly mixed. Let the bars cool completely before cutting to prevent them from crumbling.
