Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, peanut butter, honey, vanilla extract, cinnamon, and salt. Stir until combined.
  4. If you’d like, now’s the time to mix in chocolate chips or nuts.
  5. Pour the mixture into the prepared baking pan and spread it evenly.
  6. Bake for 20-25 minutes, or until golden brown on top.
  7. Let the bars cool in the pan before cutting them into squares.

Notes

Make sure your bananas are very ripe; the riper they are, the sweeter your bars will be. Don’t over-mix the batter; just combine the ingredients until they are evenly mixed. Let the bars cool completely before cutting to prevent them from crumbling.
