  • 1 cup cooked rice Any type of rice can be used.
  • ½ cup broccoli florets Fresh or frozen broccoli can be used.
  • ½ cup shredded carrots Fresh or store-bought.
  • ¼ cup green onions, chopped For garnish.
Bang Bang Sauce
  • ¼ cup mayonnaise Can use low-fat or vegan mayo.
  • 2 tablespoons sweet chili sauce Adjust for desired sweetness.
  • 1 tablespoon sriracha Adjust for desired spice level.
  • Salt and pepper to taste

Method
 

Preparation
  1. Cook the rice according to package instructions.
  2. In a medium bowl, mix together the mayonnaise, sweet chili sauce, and sriracha until smooth.
  3. Season the chicken breasts with salt and pepper, then grill or pan-fry them over medium heat for about 6-7 minutes on each side until fully cooked.
  4. Let the chicken rest for a few minutes before slicing.
Assembly
  1. In a serving bowl, layer the cooked rice as your base.
  2. Top it with broccoli florets, shredded carrots, and the sliced chicken.
  3. Drizzle the Bang Bang sauce over the assembled ingredients, then finish with chopped green onions.

Notes

This dish can be prepared in advance. Store cooked rice and chicken separately and mix with sauce before serving. Leftovers can be kept for 3-4 days in the fridge.
