Ingredients
  

Pancake Batter Ingredients
  • 3 large eggs, room temperature for the best mixing
  • 500 ml milk, any variety can be whole, skim, or almond milk
  • 250 grams all-purpose flour works great
  • 100 grams melted butter adds richness and moisture
  • 1 packet vanilla sugar, optional for an extra hint of sweetness

Method
 

Preparation
  1. In a large bowl, whisk together the eggs and milk until well combined.
  2. Slowly add the melted butter while stirring the mixture.
  3. In another bowl, sift the flour and gradually add it to the wet ingredients.
  4. Mix until just combined; be careful not to overmix—some lumps are okay!
Cooking
  1. Preheat a non-stick skillet or griddle over medium heat.
  2. Pour about 1/4 cup of batter onto the skillet for each pancake.
  3. Cook until bubbles form on the surface, then flip to cook the other side until golden brown.
  4. Repeat with the remaining batter, adjusting heat as necessary.

Notes

Make sure your skillet is adequately preheated. For fluffier pancakes, let the batter rest for about 10 minutes before cooking.
