  1. Season the chicken breasts with salt and pepper on both sides.
Cooking
  1. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the pan and set aside.
  2. In the same skillet, add the fresh blueberries, honey, and thyme. Stir gently and cook until the blueberries begin to burst and create a sauce, about 3-4 minutes.
  3. Return the chicken to the skillet, spooning the blueberry sauce over the top. Cook for an additional 2-3 minutes until everything is heated through.
  4. Garnish with a few extra thyme leaves and enjoy!

Notes

Make sure not to overcrowd the pan when searing the chicken; this helps achieve a nice golden crust. Adjust the honey to taste if blueberries are not sweet. Use the freshest thyme for the best flavor results.
