- Season the chicken breasts with salt and pepper on both sides.
Cooking
- In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the pan and set aside.
- In the same skillet, add the fresh blueberries, honey, and thyme. Stir gently and cook until the blueberries begin to burst and create a sauce, about 3-4 minutes.
- Return the chicken to the skillet, spooning the blueberry sauce over the top. Cook for an additional 2-3 minutes until everything is heated through.
- Garnish with a few extra thyme leaves and enjoy!
Notes
Make sure not to overcrowd the pan when searing the chicken; this helps achieve a nice golden crust. Adjust the honey to taste if blueberries are not sweet. Use the freshest thyme for the best flavor results.
