Blueberry Swirl Yogurt Bites

Ingredients
  

Yogurt Base
  • 2 cups Full-Fat Greek Yogurt Use Greek yogurt for best flavor and consistency.
  • 1 teaspoon Vanilla Extract Vanilla bean paste can be used for a richer taste.
Blueberry Swirl
  • 2 cups Fresh or Frozen Blueberries Can substitute with raspberries or strawberries.
  • ¼ cup Honey or Maple Syrup Agave syrup or coconut sugar are alternatives.
  • 1 tablespoon Lemon Juice Lime juice can be used as an alternative.
  • 1 tablespoon Cornstarch Optional for thickening; can substitute with arrowroot starch.

Method
 

Preparation
  1. Prepare the Blueberry Swirl: In a saucepan, combine the blueberries, honey or maple syrup, lemon juice, and cornstarch (if using). Cook the mixture over medium heat for about 5–7 minutes, or until the blueberries begin to burst and the sauce thickens. Stir frequently to prevent sticking. Once done, remove from heat and allow to cool slightly.
  2. Blend the Yogurt Mixture: In a blender, combine the Greek yogurt and vanilla extract. Blend until smooth and creamy.
  3. Combine the Mixtures: In a large mixing bowl, combine the yogurt mixture with half of the cooled blueberry swirl. Gently fold in to create a marbled effect.
Assembly
  1. Fill the Molds: Using a spoon or a piping bag, fill your ice cube trays or silicone molds with the yogurt mixture. Leave a little space at the top for the blueberry swirl.
  2. Add the Blueberry Swirl: Swirl in the remaining blueberry mixture on top of each yogurt bite.
Freezing
  1. Freeze the Bites: Place the filled molds into the freezer and allow the yogurt bites to freeze for at least 4 hours or overnight for best results.
  2. Serve and Enjoy: Once frozen, pop the yogurt bites out of the molds and store them in an airtight container in the freezer.

Notes

These yogurt bites can be frozen for up to 2 months. For best results, store them in an airtight container. Consider portioning them into snack-sized bags for convenience.
