Method
Cooking the Pasta
- Cook pasta in salted water until al dente. Save some pasta water.
Making the Sauce
- Heat olive oil in a pan. Cook onion until soft. Add garlic and cook briefly.
- Add crushed tomatoes, tomato paste, Italian seasoning, salt, and pepper. Simmer for 8 to 10 minutes.
- Add fresh spinach and stir until wilted.
Combining
- Add cooked pasta to the sauce and mix well. Add reserved pasta water if needed.
- Stir in parmesan cheese and serve warm.
Notes
Do not overcook spinach. Use pasta water for a smooth sauce. Simmer sauce for better flavor. Consider variations like a creamy version with added cream, a spicy version with chili flakes, or a protein version with chicken or chickpeas.
