Pasta and Sauce Ingredients
  • 300 g bow-tie pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1 can crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups fresh spinach Do not overcook.
  • ½ cup parmesan cheese For serving.
Optional Ingredients
  • chili flakes For added spice.
  • basil For garnish.
  • cream For a creamy version.
  • chicken or chickpeas For added protein.

Method
 

Cooking the Pasta
  1. Cook pasta in salted water until al dente. Save some pasta water.
Making the Sauce
  1. Heat olive oil in a pan. Cook onion until soft. Add garlic and cook briefly.
  2. Add crushed tomatoes, tomato paste, Italian seasoning, salt, and pepper. Simmer for 8 to 10 minutes.
  3. Add fresh spinach and stir until wilted.
Combining
  1. Add cooked pasta to the sauce and mix well. Add reserved pasta water if needed.
  2. Stir in parmesan cheese and serve warm.

Notes

Do not overcook spinach. Use pasta water for a smooth sauce. Simmer sauce for better flavor. Consider variations like a creamy version with added cream, a spicy version with chili flakes, or a protein version with chicken or chickpeas.
