Prepare the Filling

- Roll the enchiladas with filling and place seam-side down.
Make the Sausage Gravy
- Brown the reserved sausage, then sprinkle flour and cook for 1 minute.
- Slowly whisk in milk and bring to a simmer.
- Season gravy to taste.
Assemble and Bake
- Spoon gravy over rolled tortillas and top with cheese.
- Bake at 375°F for 15 to 20 minutes until bubbling.
- Let rest before serving.
Notes
For best results, use freshly shredded cheese and thaw hash browns well. Optionally broil for 1-2 minutes for crispy edges.
