Ingredients
  

Wet Ingredients
  • 1 cup Plain 2% Greek Yogurt Unsweetened plant-based yogurt for dairy-free option.
  • 2 large Eggs Room temperature preferred.
  • 1 cup Cheddar Cheese, shredded Substitute with favorite cheese if desired.
Dry Ingredients
  • 1 cup All-Purpose Flour Can substitute with gluten-free blend.
  • 2 tablespoons Ground Flaxseed Chia seeds can be used as an alternative.
  • 1 tablespoon Baking Powder Ensure freshness.
  • 0.5 teaspoon Salt Kosher or sea salt preferred.
  • 0.5 teaspoon Garlic Powder Fresh minced garlic may be substituted.
  • 0.25 teaspoon Red Pepper Flakes Optional for spice.
Vegetables
  • 1 cup Spinach, wilted & squeezed dry Use fresh and squeeze out moisture well.
  • 2 tablespoons Chives, chopped Can substitute with green onions or dried chives.

Method
 

Preparation
  1. Preheat your oven to 400°F (205°C). Line a baking tray with parchment paper or a silicone mat.
  2. Heat a dry skillet over medium heat. Add the spinach and toss until wilted (about 1–2 minutes). Remove from heat and squeeze out excess moisture.
  3. In a medium bowl, whisk together the all-purpose flour, ground flaxseed, baking powder, salt, garlic powder, and red pepper flakes.
  4. In a larger bowl, beat the Greek yogurt and eggs until smooth. Stir in the shredded cheddar and chopped chives, then fold in spinach.
  5. Combine the dry ingredients with the wet mixture and fold gently until just combined. Avoid overmixing.
  6. Using a cookie scoop or spoon, drop rounded mounds onto the prepared baking tray.
Baking
  1. Bake in the preheated oven for 12–16 minutes, until the tops are golden.
Cooling & Serving
  1. Remove from the oven and let biscuits cool for 5 minutes before transferring to a cooling rack.
  2. Serve warm or store in an airtight container.

Notes

For a milder garlic flavor, use less garlic powder or roasted garlic. These biscuits can be frozen unbaked for easy weekday mornings.
