  • Salt and pepper to taste
  • 2 tbsp olive oil

Preparation and Cooking
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, bell pepper, and minced garlic. Sauté until the vegetables are soft and fragrant.
  3. Stir in the Cajun seasoning, mixing well to combine the flavors.
  4. Pour in the vegetable broth and canned tomatoes. Bring the mixture to a simmer.
  5. Add the fresh crab meat and let it cook for about 10 minutes, allowing the crab to absorb the flavors.
  6. Stir in the heavy cream, then season with salt and pepper according to your taste.
  7. Simmer for another 5 minutes until everything is heated through.
  8. Serve hot, garnished with fresh parsley for a pop of color.
