Preparation
- Preheat the grill to medium heat.
- Peel, core, and slice the pineapple into thick rings, about 1/2 inch thick.
- In a bowl, mix the brown sugar, melted butter, and cinnamon until well combined.
- Brush the pineapple rings with the brown sugar mixture, coating both sides.
Grilling
- Place the pineapple on the grill and cook for about 3-5 minutes on each side, until caramelized and grill marks appear.
- Keep an eye on them to avoid overcooking; you want them to be nice and golden.
Serving
- Serve warm, optionally topped with a scoop of vanilla ice cream.
