Ingredients
  

For the Pinwheels
  • 1 sheet Puff Pastry (Thawed) Use store-bought puff pastry for ease.
  • 2 large Yellow Onions (Sliced) Choose sweet yellow onions for best flavor.
  • 2 tablespoons Olive Oil (Extra virgin)
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper (Freshly ground) Adjust to taste.
  • 2 tablespoons Fresh Thyme (Chopped) Fresh thyme adds aromatic flavor.

Method
 

Caramelizing the Onions
  1. Heat olive oil in a large skillet over medium heat. Add sliced yellow onions.
  2. Stir gently to coat onions in oil. Sprinkle with salt and black pepper.
  3. Cook slowly for 20-30 minutes, stirring occasionally, until onions are rich golden brown, soft, and sweet.
Adding Thyme
  1. Once onions are caramelized, stir in chopped fresh thyme for about a minute.
Assembling the Pinwheels
  1. Preheat oven to 400°F (200°C). Roll out thawed puff pastry on a floured surface.
  2. Spread the caramelized onion and thyme mixture evenly over the pastry, leaving a small border around the edges.
  3. Roll the pastry tightly into a log shape from one edge.
Slicing and Baking
  1. Cut the log into 1-inch thick slices and arrange on a baking tray lined with parchment paper.
  2. Bake for 15-20 minutes, or until pinwheels are golden brown and puffed.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. For freezing, prepare and slice, then freeze until solid before transferring to a container. Bake straight from frozen, adding extra time.
