Ingredients

  • 2 cups shredded mozzarella cheese Creates the classic stretchy texture.

  • 2 tablespoons all purpose flour Used to help bind ingredients.
  • 2 tablespoons cornstarch Helps with texture.
  • 1 teaspoon garlic powder Adds flavor.
  • 1 teaspoon onion powder Adds flavor.
  • ½ teaspoon black pepper Adds spice.
  • ½ teaspoon salt Enhances overall flavor.
  • 2 tablespoons chopped parsley Optional for garnish.
For Coating
  • 1 cup breadcrumbs Creates the crispy crust.
  • 2 eggs eggs Used for binding the coating.
  • 2 tablespoons milk Used with eggs for coating.
For Frying
  • Vegetable oil For frying the cheese balls.

Method
 

Preparation
  1. In a large bowl combine the mozzarella cheese and cheddar cheese.
  2. Add the mashed potatoes and mix gently.
  3. Add flour and cornstarch.
  4. Season with garlic powder, onion powder, salt, and black pepper.
  5. Mix everything until the ingredients form a smooth and slightly firm mixture. If the mixture feels sticky, add a small amount of flour.
Shaping
  1. Take about one tablespoon of the mixture and roll it into a smooth ball.
  2. Repeat until all mixture is used and place the shaped balls on a tray.
  3. Refrigerate them for about 20 minutes.
Coating
  1. Whisk the eggs with milk in one bowl and place breadcrumbs in another bowl.
  2. Take one ball, dip it in the egg mixture, and roll it in breadcrumbs until coated.
  3. For extra crispiness, repeat the egg and breadcrumb coating once more.
Frying
  1. Heat vegetable oil in a deep frying pan over medium heat to about 350°F or 175°C.
  2. Carefully place a few cheese balls in the oil without overcrowding the pan.
  3. Fry for about 2 to 3 minutes until golden brown and remove using a slotted spoon.
  4. Place them on paper towels to remove excess oil and serve warm.

Notes

Chill the balls before frying for better shape retention. Keep oil at the right temperature to avoid burnt outsides or greasy cheese balls. Experiment with flavors by adding spices or fresh herbs.
