Cheesy Corn Fritters

Ingredients
  

Main Ingredients
  • 1 ½ cups corn kernels (fresh, canned, or frozen)
  • 1 cup shredded cheese (cheddar works best)
  • ¾ cup all-purpose flour
  • 2 large eggs
  • ¼ cup milk
  • 2 tablespoons chopped green onions finely chopped
  • 2 tablespoons chopped fresh parsley (optional)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
For Frying
  • 3 to 4 tablespoons oil (vegetable or canola)
Optional Add-Ins
  • 1 small jalapeño, finely chopped
  • ½ teaspoon smoked paprika
  • 2 tablespoons grated Parmesan cheese

Method
 

Preparation
  1. If using canned corn, drain it well. If using frozen corn, thaw and pat dry to avoid moisture issues.
Mix Dry Ingredients
  1. In a large bowl, combine flour, baking powder, salt, black pepper, and garlic powder. Mix well.
Combine Wet Ingredients
  1. In another bowl, whisk together eggs and milk. Add chopped green onions and parsley, and mix.
Combine Mixtures
  1. Add the wet mixture to the dry ingredients. Stir until just combined, and fold in corn and shredded cheese.
Cook the Fritters
  1. Heat a large skillet over medium heat and add oil. Test oil by dropping a small amount of batter; it should sizzle.
  2. Scoop about 2 tablespoons of batter for each fritter, place in the pan, and gently flatten. Cook for 2 to 3 minutes on each side, flipping when golden brown.
Serve
  1. Transfer cooked fritters to a plate lined with paper towels to absorb excess oil. Serve warm.

Notes

For best results, remove excess moisture from corn and avoid overcrowding the pan. Use medium heat for frying.
