Preparation
- If using canned corn, drain it well. If using frozen corn, thaw and pat dry to avoid moisture issues.
Mix Dry Ingredients
- In a large bowl, combine flour, baking powder, salt, black pepper, and garlic powder. Mix well.
Combine Wet Ingredients
- In another bowl, whisk together eggs and milk. Add chopped green onions and parsley, and mix.
Combine Mixtures
- Add the wet mixture to the dry ingredients. Stir until just combined, and fold in corn and shredded cheese.
Cook the Fritters
- Heat a large skillet over medium heat and add oil. Test oil by dropping a small amount of batter; it should sizzle.
- Scoop about 2 tablespoons of batter for each fritter, place in the pan, and gently flatten. Cook for 2 to 3 minutes on each side, flipping when golden brown.
Serve
- Transfer cooked fritters to a plate lined with paper towels to absorb excess oil. Serve warm.
Notes
For best results, remove excess moisture from corn and avoid overcrowding the pan. Use medium heat for frying.
