  • 1 cup shredded cheese cheddar is classic, but feel free to use your favorite.
  • ½ cup chopped vegetables a mix like bell peppers, spinach, or onions, finely diced.
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin with cooking spray or oil.
  3. In a mixing bowl, whisk together the cottage cheese and eggs until well combined.
  4. Stir in the shredded cheese, chopped vegetables, salt, and pepper.
  5. Pour the mixture into the muffin tin, filling each cup about 3/4 full.
Cooking
  1. Bake for 20-25 minutes, or until the bites are set and lightly golden on top.
  2. Allow to cool slightly before removing from the muffin tin.
