  • 4 pieces low-carb tortillas Choose your favorite brand or make simple almond/flax tortillas at home.
  • 1 cup shredded mozzarella cheese Whole-milk shredded mozzarella melts best.
  • 20 slices pepperoni Turkey pepperoni can be used for a lower fat option.
  • ¼ cup marinara sauce For dipping, can be store-bought or homemade.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone mat.
  2. If tortillas are stiff, warm each tortilla for 8–10 seconds in the microwave or a dry skillet to make them pliable.
  3. Sprinkle 1/4 cup of mozzarella over each tortilla, leaving a half-inch border.
  4. Place 5 pepperoni slices on each tortilla and roll them up tightly, starting at one edge.
  5. Place the rolled tortillas seam-side down on the baking sheet.
Baking
  1. Bake for 10–12 minutes until golden and bubbly.
  2. Slice into 1-inch pieces, serve with marinara for dipping.

Notes

Make ahead by assembling and refrigerating covered for up to 24 hours. Reheat as similar from chilled. Can swap pepperoni with roasted vegetables for a vegetarian option.
