Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine shredded chicken, black beans, corn, salsa, cooked rice, chili powder, cumin, salt, and pepper. Mix until evenly distributed.
Layering
- In a greased casserole dish, layer half of the chicken mixture, then sprinkle with half the cheese.
- Add a layer of tortilla chips or tortillas, crushed for chips or overlapping for tortillas.
- Repeat the layers with the remaining chicken mixture and cheese on top.
Baking
- Bake in the preheated oven for about 25–30 minutes until heated through and cheese is bubbly.
- Let cool for a few minutes before serving and garnish with fresh cilantro, diced tomatoes, sliced avocado, plain yogurt, or lime wedges.
Notes
Store leftovers in airtight containers in the refrigerator for 3–4 days. Can also be frozen for later meals. Add toppings like sour cream or guacamole for serving.
