Preparation
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, and sauté until translucent.
- In a bowl, combine the cooked shredded chicken, cauliflower rice, sautéed onion and garlic, cream or milk, and half of the shredded cheese. Mix well.
- Pour the mixture into a greased baking dish and spread evenly.
- Top with the remaining cheese.
- Bake in the preheated oven for about 25-30 minutes, or until bubbly and golden on top.
- Garnish with herbs if desired, serve hot.
Notes
Consider using a lighter cream or dairy-free alternatives. For extra flavor and nutrition, add vegetables like spinach or mushrooms. You can also freeze the casserole for future meals.
