For the Chicken
  • 6 to 8 pieces bone-in and skin-on chicken thighs Boneless is fine if you prefer quicker cooking.
  • 1 cup chipotle honey sauce Pre-made or homemade using chipotle chili in adobo, honey, olive oil, and lime.
For the Mashed Potatoes
  • 2 to 2.5 pounds potatoes Starchy potatoes like Russet or Yukon Gold are recommended.
  • 1 to 1.5 cups shredded smoked gouda cheese Freshly shredded melts best.
  • 4 tablespoons butter Use unsalted to control seasoning.
  • 0.5 to 0.75 cups milk Whole milk is best for creaminess.
  • to taste Kosher salt For boiling and seasoning; adjust to taste.
  • to taste freshly ground black pepper For finishing.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Marinate the chicken thighs in chipotle honey sauce for at least 30 minutes.
Cooking
  1. Place the marinated chicken on a baking sheet and bake for 25 to 30 minutes until cooked through and caramelized.
  2. Meanwhile, peel and chop the potatoes, then boil them in salted water until tender.
  3. Drain the potatoes and mash them with butter, milk, smoked gouda, salt, and pepper until creamy.
  4. Serve the chicken thighs over the smoked gouda mashed potatoes.

Notes

If using boneless thighs, bake 5 to 8 minutes less. For dairy-free, use olive oil and plant-based milk.
