Ingredients
  

For the Yogurt Mixture
  • 1.5 cups chopped strawberries
  • 1 cup plain Greek yogurt
  • 1 tbsp honey
  • 1 tsp vanilla extract
For the Chocolate Coating
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil

Method
 

Preparation
  1. Add the chopped strawberries, Greek yogurt, honey, and vanilla extract to a large mixing bowl. Mix until smooth.
  2. Take spoonfuls of the yogurt mixture (about 2 tablespoons each) and place them on a parchment paper-lined baking sheet to form clusters.
Freezing
  1. Place the baking sheet in the freezer to freeze the clusters solid for about 1 to 2 hours.
Chocolate Coating
  1. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 15 to 30-second intervals, stirring until melted and smooth.
  2. Dip each yogurt cluster in the melted chocolate, allowing excess to drip off, and place them back on the parchment paper.
  3. Return the chocolate-coated clusters to the freezer for a few minutes to harden.

Notes

Store clusters in an airtight container in the freezer for up to two months. Use parchment paper between layers to prevent sticking.
