Preparation
- Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
- In a mixing bowl, combine melted butter and mashed bananas until smooth.
- Stir in sugar, beaten egg, and vanilla until well blended.
- Sprinkle in baking soda and salt, then fold in flour until just combined.
- In a separate bowl, combine cinnamon and sugar for the swirl.
Assembly
- Pour half of the batter into the prepared loaf pan.
- Sprinkle three-quarters of the cinnamon-sugar mixture over the batter.
- Carefully pour the remaining batter over the cinnamon-sugar layer.
- Use a butter knife to gently swirl through all layers.
- Sprinkle the remaining cinnamon-sugar mixture on top.
Baking
- Bake in the preheated oven for 50-60 minutes until a toothpick comes out clean.
- Cool in the pan for 15 minutes, then transfer to a wire rack.
Notes
Serve warm with butter or cream cheese. Enjoy with coffee or a fruit salad. Store in an airtight container for up to 3 days or freeze for longer storage.
