  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Preparation
  1. Start by preparing your ingredients: diced vegetables, minced garlic, and grated ginger.
Cooking
  1. In a large pot over medium heat, add a splash of oil and sauté garlic and ginger for about 2 minutes until fragrant.
  2. Add diced vegetables and continue to cook for another 3-4 minutes until softened.
  3. Pour in the coconut milk and broth, stirring to combine. Bring the mixture to a simmer.
  4. Add the fish fillets. Cook for about 5-7 minutes, or until the fish is opaque and flakes easily.
  5. Squeeze in the juice of one lime and stir well. Adjust seasoning with salt and pepper.
  6. Serve hot, garnished with lime zest and fresh cilantro on top.

Notes

Make sure not to overcook the fish; it cooks quickly and can become tough if left too long. Feel free to adjust the thickness of the soup by adding a bit more broth or coconut milk. Fresh cilantro adds a lovely touch, but you can substitute it with parsley if you're not a fan.
