  • 1 cup coconut milk Use full-fat for a creamier texture.
  • ½ cup lime juice Freshly squeezed is best.
  • 2 tablespoons honey or agave syrup Use honey for a richer flavor or agave syrup for a vegan option.
  • 1 cup club soda Can substitute with tonic water or sparkling water.

Preparation
  1. In a blender, combine the coconut milk, lime juice, and honey (or agave syrup). Blend until the mixture is smooth and well combined.
  2. In a glass, add a handful of ice cubes. Pour the blended coconut-lime mixture over the ice until the glass is about three-quarters full.
  3. Gradually top the glass with club soda, allowing it to mix gently with your coconut-lime mixture. Stir gently to combine, ensuring the fizz remains intact.
  4. Garnish your Coconut Lime Refresher with fresh lime slices and a sprinkle of coconut flakes on top. Serve immediately.

Notes

For added flavor, consider mixing in fresh mint leaves or a splash of pineapple juice. The drink is best enjoyed fresh, but the uncarbonated mixture can be stored in the refrigerator for 1-2 days.
