- In a blender, combine the coconut milk, lime juice, and honey (or agave syrup). Blend until the mixture is smooth and well combined.
- In a glass, add a handful of ice cubes. Pour the blended coconut-lime mixture over the ice until the glass is about three-quarters full.
- Gradually top the glass with club soda, allowing it to mix gently with your coconut-lime mixture. Stir gently to combine, ensuring the fizz remains intact.
- Garnish your Coconut Lime Refresher with fresh lime slices and a sprinkle of coconut flakes on top. Serve immediately.
Notes
For added flavor, consider mixing in fresh mint leaves or a splash of pineapple juice. The drink is best enjoyed fresh, but the uncarbonated mixture can be stored in the refrigerator for 1-2 days.
