Ingredients
  

Pasta and Vegetables
  • 8 ounces tortellini Fresh or frozen tortellini can be used.
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup bell pepper, diced
  • ¼ cup red onion, diced
  • ¼ cup olives, sliced
Dressing
  • cup olive oil
  • 2 tablespoons red wine vinegar Can substitute with apple cider vinegar or lemon juice.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Begin by boiling water in a large pot. Add the tortellini according to the package instructions, usually about 3-5 minutes. Once cooked, drain the tortellini and let it cool.
  2. In a large mixing bowl, combine the cooled tortellini with the cherry tomatoes, cucumber, bell pepper, red onion, and olives.
Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
Combine
  1. Pour the dressing over the tortellini mixture. Toss gently to ensure the pasta and vegetables are well-coated.
  2. Let the pasta salad chill in the refrigerator for at least 30 minutes before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Freezing is not recommended due to the texture of the tortellini. Feel free to incorporate extra vegetables like spinach or roasted veggies for added flavor.
