  • 1 cup whole milk small-curd cottage cheese (4% milkfat, high protein) Use high-quality, full-fat cottage cheese for best texture and flavor.
  • 1–2 tbsp Parmesan cheese, finely grated (optional) For extra umami and crispness.
Seasonings
  • Sea salt, cracked black pepper, smoked paprika, garlic powder, onion powder, dried herbs, or chili flakes Add any of these seasonings to taste.

Oven Method
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper or a silicone mat.
  2. If desired, blend the cottage cheese in a blender or food processor for 20–30 seconds until mostly smooth.
  3. In a bowl, combine the cottage cheese, optional Parmesan, and chosen seasonings.
  4. Drop small mounds (about 1 tablespoon each) onto the prepared sheet and flatten them slightly to form thin discs.
  5. Bake for 18–25 minutes, rotating halfway through, until the edges are golden and centers are set.
  6. Remove from oven and cool on the baking sheet for 5 minutes before transferring to a cooling rack.
Microwave Method
  1. Place parchment or a microwave-safe silicone mat on a microwave-safe plate.
  2. Make small, thin rounds of the cottage cheese mixture and flatten them well.
  3. Microwave on high for 45–60 seconds, checking for doneness and repeat in increments if needed.
  4. Let chips cool on the plate for 1–2 minutes to firm up.

Notes

For a sweet variation, use lightly sweetened cottage cheese mixture and dust with cinnamon sugar after baking for a seasonal twist. Store cooled chips in an airtight container for up to 2 days.
