Preparation
- Add the cottage cheese, honey, and vanilla to a blender. Blend on medium-high until the mixture is silky smooth, about 30–60 seconds.
- In a bowl, whisk together the almond flour, baking soda, and salt. Pour in the blended mixture and stir until a thick dough forms. Fold in the chocolate chips.
Baking
- Grease your skillet and pour the dough into it, smoothing the top. Press a few extra chocolate chips on top if desired.
- Bake in a preheated oven at 350°F (175°C) for 20–25 minutes, or until the edges are golden brown and the center springs back when touched.
Serving
- Allow to cool for 10–15 minutes. Serve warm with ice cream, honey, or yogurt.
Notes
For individual servings, divide the dough into a greased muffin tin and bake for 12–15 minutes. You can also add nuts, dried fruit, or spices for flavor variations.
