Salad Ingredients
  • 4 cups sweet corn Use fresh or thawed frozen corn.
  • 12 slices cooked bacon Finely chopped after cooking.
  • ¼ cup green onions Chopped.
  • 1 jalapeño Finely diced, seeds removed for less heat.
  • 1 cup cheddar cheese Shredded.
  • 1 Juice of lime
Ranch Dressing
  • ½ cup Ranch salad dressing
  • 1 ½ cups mayonnaise
  • ½ cup sour cream
  • cup whole milk
  • ¼ cup buttermilk
  • 2 cloves garlic Minced.
  • ¼ teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 tablespoons lemon juice
  • 1 teaspoon fresh dill

Method
 

Prepare Ranch Dressing
  1. In a bowl, whisk together Ranch salad dressing, mayonnaise, sour cream, whole milk, and buttermilk.
  2. Add minced garlic, onion powder, garlic powder, lemon juice, and fresh dill.
  3. Stir until smooth. Taste and add salt and pepper as needed. Chill while you make the salad.
Make Salad
  1. Place sweet corn in a large bowl. If using frozen corn, thaw and drain well.
  2. Add chopped bacon, shredded cheddar cheese, chopped green onions, and diced jalapeño.
  3. Pour the chilled ranch dressing over the corn mixture.
  4. Add lime juice, kosher salt, and black pepper to taste.
  5. Stir gently until all ingredients combine.
  6. Chill for 30 minutes to allow flavors to blend. Serve cold or at room temperature.

Notes

For a smokier flavor, char the corn on a hot pan or grill. This salad pairs well with chips or can be used as a topping for grilled chicken or fish. Garnish with extra green onions or crumbled bacon.
