Main Ingredients
  • 4 boneless, skinless chicken breasts Even thickness preferred.
  • 1 tbsp olive oil
  • 1 tbsp butter
  • ½ cup chicken broth
  • ½ cup heavy cream Can be substituted with coconut milk.
  • 2 tbsp Dijon mustard
  • 1 tbsp whole grain mustard Adds texture.
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme, chopped Or 1 tsp dried thyme.
  • to taste Salt and pepper
  • 1 tbsp fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil and butter over medium-high heat until melted and foamy.
Cooking Chicken
  1. Cook the chicken breasts for 5–6 minutes per side until golden brown and cooked through.
  2. Remove the chicken from the skillet and set aside.
Making the Sauce
  1. In the same skillet, add garlic and cook for 1 minute until fragrant.
  2. Add chicken broth, heavy cream, Dijon mustard, whole grain mustard, and thyme to the skillet. Stir well to combine.
  3. Bring the sauce to a simmer and cook for 3–5 minutes until it thickens slightly.
  4. Return the chicken breasts to the skillet and coat them with the sauce.
  5. Simmer for another 2–3 minutes until the chicken is heated through.
Serving
  1. Garnish with fresh parsley and serve with your choice of side dish.

Notes

If chicken breasts are uneven in thickness, pound them for uniform cooking. Use a thermometer to ensure chicken is safe at 165°F (74°C). For a smooth sauce, blend if desired.
