Preparation
- In a medium bowl, mix the diced apples, brown sugar, cinnamon, and lemon juice until the apples are evenly coated. Let the mixture sit for 5–10 minutes.
- If your apples are very firm, microwave the mixture for 30–60 seconds to slightly soften them before filling, or roast the apple mixture on a sheet at 375°F for 10 minutes.
Assembly
- Place a few spoonfuls of the apple mixture on each tortilla and sprinkle with granola.
- Roll up the tortillas tightly, tucking the filling in as you go so the seam is secure.
Cooking
- Spray the air fryer basket with cooking spray and place the taquitos seam-side down in a single layer, without crowding.
- Spray the tops lightly with cooking spray to help them turn golden-brown.
- Air fry at 400°F (200°C) for 8–10 minutes until crispy and golden, flipping halfway through if necessary.
Serving
- Remove carefully with tongs and let cool for a minute, then dust with powdered sugar before serving.
- Serve warm for the best texture and flavor.
Notes
Roasting the apples enhances flavor; microwaving is quick. Keep leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
