Ingredients

Taquito Ingredients
  • 6 small flour tortillas Small tortillas help keep the dessert-sized portions tidy.
  • 2 cups peeled and diced apples About 2 medium apples; Granny Smith or Honeycrisp work well.
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 cup granola Use a crunchy variety for texture.
  • cooking spray For spraying the air fryer basket.
  • powdered sugar For dusting before serving.

Method

Preparation
  1. In a medium bowl, mix the diced apples, brown sugar, cinnamon, and lemon juice until the apples are evenly coated. Let the mixture sit for 5–10 minutes.
  2. If your apples are very firm, microwave the mixture for 30–60 seconds to slightly soften them before filling, or roast the apple mixture on a sheet at 375°F for 10 minutes.
Assembly
  1. Place a few spoonfuls of the apple mixture on each tortilla and sprinkle with granola.
  2. Roll up the tortillas tightly, tucking the filling in as you go so the seam is secure.
Cooking
  1. Spray the air fryer basket with cooking spray and place the taquitos seam-side down in a single layer, without crowding.
  2. Spray the tops lightly with cooking spray to help them turn golden-brown.
  3. Air fry at 400°F (200°C) for 8–10 minutes until crispy and golden, flipping halfway through if necessary.
Serving
  1. Remove carefully with tongs and let cool for a minute, then dust with powdered sugar before serving.
  2. Serve warm for the best texture and flavor.

Notes

Roasting the apples enhances flavor; microwaving is quick. Keep leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
