  • 4 pieces boneless, skinless chicken breasts Slice large breasts in half if needed.
  • 1 cup breadcrumbs (panko for extra crispness) Use panko for a lighter crust.
  • ½ cup grated Parmesan cheese Freshly grated is best.
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 cup marinara sauce Homemade or jarred.
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil For frying.
  • as needed Fresh basil for garnish Optional.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a shallow dish, combine breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  3. Coat each chicken breast in the breadcrumb mixture, pressing lightly to adhere.
Cooking
  1. In a large skillet, heat olive oil over medium heat and cook the chicken breasts for about 4–5 minutes on each side until golden brown.
  2. Transfer the chicken to a baking dish.
  3. Pour marinara sauce over each piece of chicken.
  4. Top with mozzarella cheese.
  5. Bake in the preheated oven for about 15–20 minutes, until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F (74°C).
  6. Garnish with fresh basil if desired and serve.

Notes

Store leftovers in an airtight container for up to 3–4 days or freeze for 2–3 months. Reheat in a 350°F oven.
