Main Ingredients
  • 2 pounds cube steak, trimmed of excess fat and patted dry If very thin, stack two per serving for heartier portions.
  • 1 can (10.5 ounce) cream of mushroom soup Choose low-sodium if you plan to add more salt later.
  • 1 packet (about 1 ounce) onion soup mix Adds savory depth and a hint of oniony sweetness.
  • 1 cup beef broth Low-sodium or regular, depending on how seasoned you like your gravy.
  • to taste Salt and freshly ground black pepper Freshly ground gives better aroma.
Optional Ingredients
  • 1 medium yellow or sweet onion, sliced thinly Fresh or frozen both work.
  • 8 ounces fresh mushrooms, sliced White button or cremini are excellent; thaw and drain if using frozen.

Method
 

Preparation
  1. Pat each cube steak dry, season lightly with salt and black pepper, and layer in the bottom of the Crock Pot.
  2. In a medium bowl, whisk together the cream of mushroom soup, onion soup mix, and beef broth until smooth.
Cooking
  1. Pour the gravy mixture over the cube steaks, ensuring even coverage.
  2. If using, scatter the sliced onions and mushrooms on top.
  3. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the cube steak is fork-tender.
Finishing Touches
  1. Adjust seasoning with additional salt and pepper if needed.
  2. Serve over mashed potatoes, creamy polenta, or rice.

Notes

Use low-sodium broth and soup if watching salt. Cut leftover meats separately to maintain texture when storing.
