- Mix the softened cream cheese in a mixing bowl with finely chopped fresh herbs, salt, and pepper until well combined.
- Spread a generous layer of the herb cream cheese mixture on each slice of bread.
- Layer cucumber slices evenly over half of the cream cheese-covered bread slices.
- Top the cucumber-laden slices with the remaining slices of bread, cream cheese side down.
- Cut the sandwiches into quarters or your desired shapes and serve immediately or refrigerate until serving.
Notes
Store sandwiches in an airtight container in the refrigerator; best eaten within a day or two. Assemble sandwiches ahead of time but add cucumbers just before serving to avoid sogginess.
