Ingredients
  

For the Sandwiches
  • 1 loaf 1 loaf of bread (white or whole grain)
  • 8 oz 8 oz cream cheese, softened
  • ΒΌ cup 1/4 cup fresh herbs (such as dill, chives, or parsley), finely chopped
  • 1 unit 1 cucumber, thinly sliced
  • Salt and pepper to taste

Method
 

Preparation
  1. Mix the softened cream cheese in a mixing bowl with finely chopped fresh herbs, salt, and pepper until well combined.
  2. Spread a generous layer of the herb cream cheese mixture on each slice of bread.
  3. Layer cucumber slices evenly over half of the cream cheese-covered bread slices.
  4. Top the cucumber-laden slices with the remaining slices of bread, cream cheese side down.
  5. Cut the sandwiches into quarters or your desired shapes and serve immediately or refrigerate until serving.

Notes

Store sandwiches in an airtight container in the refrigerator; best eaten within a day or two. Assemble sandwiches ahead of time but add cucumbers just before serving to avoid sogginess.
