- Wash the cucumbers and strawberries. Slice the cucumbers into thin rounds and hull the strawberries before slicing them. If using red onion, slice it finely.

- In a small bowl, whisk together olive oil, balsamic vinegar or lemon juice, salt, and pepper. For a sweeter dressing, add honey or agave nectar.
Combine the Ingredients
- In a large mixing bowl, combine sliced cucumbers, strawberries, and red onion. Pour the dressing over the salad and toss gently using salad tongs.
Add Fresh Herbs
- Incorporate the chopped mint leaves into the salad.
Let it Rest
- Let the salad rest for about 10-15 minutes before serving.
Serve
- Transfer the salad to a serving bowl and enjoy fresh! Optionally, sprinkle feta cheese on top.
Notes
Store in an airtight container for up to 2 days but best enjoyed fresh. Dressing can be stored separately for meal prep.
