Ingredients
  

Salad Ingredients
  • 2 large large cucumbers, thinly sliced
  • 2 cups fresh strawberries, hulled and sliced
  • ¼ cup red onion, thinly sliced (optional) Slice finely to avoid overpowering the salad.
  • ¼ cup fresh mint leaves, chopped Provides a burst of freshness.
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar or lemon juice Feel free to substitute for a different flavor.
  • Salt and pepper to taste

Method
 

Preparation
  1. Wash the cucumbers and strawberries. Slice the cucumbers into thin rounds and hull the strawberries before slicing them. If using red onion, slice it finely.
Mix the Dressing
  1. In a small bowl, whisk together olive oil, balsamic vinegar or lemon juice, salt, and pepper. For a sweeter dressing, add honey or agave nectar.
Combine the Ingredients
  1. In a large mixing bowl, combine sliced cucumbers, strawberries, and red onion. Pour the dressing over the salad and toss gently using salad tongs.
Add Fresh Herbs
  1. Incorporate the chopped mint leaves into the salad.
Let it Rest
  1. Let the salad rest for about 10-15 minutes before serving.
Serve
  1. Transfer the salad to a serving bowl and enjoy fresh! Optionally, sprinkle feta cheese on top.

Notes

Store in an airtight container for up to 2 days but best enjoyed fresh. Dressing can be stored separately for meal prep.
