Ingredients

  • 2 whole Fresh cucumbers Choose English cucumbers for thinner skins or standard slicing cucumbers.
  • 1 cup Cottage cheese Use regular or low-fat; consider small-curd for creamier texture.
  • ΒΌ cup Fresh herbs (dill, chives, or a mix) Chop fresh just before assembling.
  • 2 tablespoons Honey or balsamic glaze Drizzle lightly for sweetness, optional.

Method
 

Preparation
  1. Wash and trim the ends of the cucumbers.
  2. Slice the cucumbers into thick rounds, about 1/3 to 1/2 inch thick.
  3. Pat the cucumber slices gently with a paper towel to remove excess moisture, if desired.
Assembly
  1. Spoon or pipe a dollop of cottage cheese onto each cucumber slice.
  2. Sprinkle the cottage cheese with finely chopped fresh herbs.
  3. Drizzle with honey or balsamic glaze if desired.
  4. Add optional finishing touches such as freshly ground black pepper or lemon zest.

Notes

These bites are best consumed fresh, but you can store leftovers in an airtight container for up to 24 hours. Avoid soggy bites by patting cucumbers dry before assembly.
