Ingredients
  

Seasonal Fruits
  • 2 cups strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup kiwi, peeled and sliced
  • 1 cup pineapple, diced
  • 1 cup mango, diced
Dairy-Free Dressing
  • 1 cup coconut yogurt or alternative
  • 2 tablespoons honey or maple syrup for a vegan option
  • 1 teaspoon vanilla extract
  • 1 medium juice of lime

Method
 

Preparation
  1. Wash all the fruits thoroughly.
  2. Hull the strawberries, slice them, and peel and dice the kiwi and mango.
Make the Dressing
  1. In a mixing bowl, combine the coconut yogurt, honey or maple syrup, vanilla extract, and lime juice. Whisk until smooth.
  2. Adjust the sweetness by adding more honey or syrup as desired.
Combine Fruits and Dressing
  1. Gently add the prepared fruits into the mixing bowl with the dressing.
  2. Use a spoon or spatula to carefully toss the fruit with the dressing, ensuring everything is evenly coated without crushing the fruits.
Chill and Serve
  1. Transfer the fruit salad into a serving dish and chill for at least 30 minutes to allow the flavors to meld.
  2. Garnish with mint leaves or shredded coconut if desired.

Notes

Store leftovers in an airtight container in the fridge and consume within 2 days for optimal freshness. Prepare the fruit salad ahead of time by chopping the fruits but mix the dressing just before serving.
