Preparation
- Wash the spinach and cucumber thoroughly.
- Peel and grate the ginger.
- Squeeze the juice from the lemon and have all your ingredients ready.
Blending
- Combine the spinach, cucumber, lemon juice, ginger, chia seeds, and water (or coconut water) in a blender.
- Blend on low speed, gradually increasing to high, until smooth (about 30 seconds to a minute).
Adjusting and Serving
- Taste the smoothie and adjust the sweetness or tartness by adding more lemon juice or sweetener if needed.
- Pour the smoothie into a glass and enjoy immediately.
Notes
For additional sweetness, consider adding a ripe banana or a splash of honey. To make it thicker, add a handful of ice before blending. Store in an airtight container in the fridge for up to 24 hours or freeze portioned ingredients for a quick blend.
