For the stuffed peppers
  • 0.5 pound mini sweet peppers, fresh and crisp Choose mixed colors for visual appeal
  • 0.25 cup fat-free feta cheese, crumbled Can substitute with regular feta or soft goat cheese for more creaminess
  • 2 pieces light Laughing Cow cheddar cheese wedges Room temperature for easier mixing; can substitute with another light spreadable cheddar
  • 1 teaspoon everything bagel seasoning Start with this amount and adjust to taste
  • 0.5 teaspoon chili crunch oil Lightly drained from the jar; reduce or omit if sensitive to spice
  • Optional garnish: sliced green onions or chopped fresh herbs For brightness and color

Method
 

Preparation
  1. Wash the mini peppers under cool running water and dry gently. Slice each pepper in half lengthwise and remove seeds and white ribs.
  2. Place the crumbled feta in a mixing bowl and crumble with a fork. Add the soft Laughing Cow cheddar wedges to the bowl.
  3. Microwave the cheese mixture for 20 to 30 seconds to soften, or warm the bowl over hot water. Mix until smooth.
Assembly
  1. Sprinkle in the everything bagel seasoning and chili crunch oil, then mix thoroughly.
  2. Carefully fill each pepper half with the cheese mixture, aiming for a neat dome that sits just above the edge of the pepper.
  3. Lightly garnish the filled peppers with more everything bagel seasoning and chopped herbs.
Serving
  1. Serve immediately for the best texture, or chill briefly before serving. Optionally, warm in the oven for a melted version.

Notes

These stuffed mini peppers are best enjoyed right away, but can be refrigerated for up to 48 hours. Reheat in the oven for the best results. Can be served on a platter with various garnishes for a festive look.
