Main Ingredients
  • 8 oz pasta (any type)
  • 2 cups broccoli florets Fresh broccoli preferred, frozen can be used.
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving Can substitute with vegan cheese or nutritional yeast for a vegan option.

Method
 

Cooking the Pasta
  1. Start by cooking the pasta according to the package instructions. Be sure to salt the water for added flavor.
Preparing the Broccoli
  1. During the last 3 minutes of the pasta cooking time, add the broccoli florets to the pot. Drain both the pasta and broccoli in a colander once they are done.
Sautéing the Garlic
  1. In the same pot, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.
Combining Everything
  1. Add the drained pasta and broccoli back into the pot. Season with salt and pepper to taste, and toss everything together until well combined.
Serving
  1. Plate the pasta and broccoli mix, and top with grated Parmesan cheese before serving.

Notes

For a creamier version, consider adding a splash of cream or a dollop of Greek yogurt. Storage: Store leftovers in an airtight container in the refrigerator for up to three days.
