Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet, heat a splash of olive oil over medium heat.
- Add the sliced mushrooms and sauté them until soft for about 5 minutes.
- Once the mushrooms are cooked, add the fresh spinach to the skillet and cook until wilted for another 2-3 minutes.
- In a mixing bowl, combine the cream cheese, garlic powder, onion powder, salt, and pepper, and mix until smooth.
- In a baking dish, arrange the chicken breasts side by side.
- Top the chicken breasts with the sautéed spinach and mushroom mixture, then spread the cream cheese mixture over everything.
- Sprinkle shredded mozzarella on top of the cream cheese layer.
Baking
- Place the dish in the preheated oven and bake for 25-30 minutes until the chicken is cooked through and the cheese is bubbly and golden.
- Let the dish rest for 5 minutes after removing it from the oven before slicing.
Notes
Store leftovers in an airtight container in the refrigerator for about 3-4 days. This dish can also be frozen. For meal prepping, consider making a larger batch and portioning it into meals for the week.
