  • 2 pieces chicken breasts Ensure they are of equal size for even cooking
  • 2 cups fresh spinach Washed and roughly chopped
  • 1 cup mushrooms, sliced Any variety of mushrooms can be used
  • 1 cup cream cheese Softened for easier mixing
  • ½ cup shredded mozzarella cheese For topping
  • ½ teaspoon garlic powder Adds flavor
  • ½ teaspoon onion powder Adds flavor
  • to taste Salt and pepper Season to preference
  • as needed Olive oil For sautéing

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat a splash of olive oil over medium heat.
  3. Add the sliced mushrooms and sauté them until soft for about 5 minutes.
  4. Once the mushrooms are cooked, add the fresh spinach to the skillet and cook until wilted for another 2-3 minutes.
  5. In a mixing bowl, combine the cream cheese, garlic powder, onion powder, salt, and pepper, and mix until smooth.
  6. In a baking dish, arrange the chicken breasts side by side.
  7. Top the chicken breasts with the sautéed spinach and mushroom mixture, then spread the cream cheese mixture over everything.
  8. Sprinkle shredded mozzarella on top of the cream cheese layer.
Baking
  1. Place the dish in the preheated oven and bake for 25-30 minutes until the chicken is cooked through and the cheese is bubbly and golden.
  2. Let the dish rest for 5 minutes after removing it from the oven before slicing.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days. This dish can also be frozen. For meal prepping, consider making a larger batch and portioning it into meals for the week.
