Ingredients
  

Tomato Mixture
  • 4 ripe tomatoes, diced
  • 1 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
Bread
  • 1 loaf baguette or crusty bread, sliced

Method
 

Preparation
  1. In a mixing bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, and balsamic vinegar. Stir gently to mix all the ingredients evenly. Season with salt and pepper to taste. Allow this mixture to sit at room temperature for at least 10 minutes.
Toasting Bread
  1. Preheat your oven to 400°F (200°C). Arrange the slices of bread on a baking tray and drizzle with a little olive oil. Toast in the oven for about 5-7 minutes until the bread is golden brown and crispy.
Assembly
  1. Once the bread is toasted, remove it from the oven and let it cool for a minute. Spoon the tomato mixture generously over each slice of bread.
Serving
  1. Serve immediately as an appetizer or snack. Optionally sprinkle with additional fresh basil just before serving.

Notes

For optimal texture, store leftover tomato topping separately from the bread. Can be made ahead, but toast bread just before serving.
