  • 1 cup whole milk or any substitute like almond or soy milk
  • 0.5 cups coconut oil or any neutral oil
  • 3 large eggs or egg whites
  • 1 teaspoon vanilla extract
  • 1 cup sprinkles jimmies

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your 8-inch round cake pan.
  2. In a large bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, whisk together the milk, melted coconut oil, eggs, and vanilla extract until well combined.
  4. Pour the wet mixture into the dry ingredients and mix until just combined. Avoid overmixing.
  5. Gently fold in the sprinkles with a rubber spatula.
Baking
  1. Pour the batter into your prepared cake pan and bake for 25-30 minutes. Check for doneness with a toothpick.
  2. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For added moisture, consider a mix of whole milk and yogurt. For a stronger vanilla flavor, add an extra teaspoon of vanilla extract. Feel free to experiment with flavors such as citrus zest or different extracts.
