Preparation
- Preheat the oven to 400°F (200°C).
- Season the chicken thighs or breasts with salt, pepper, thyme, and rosemary.
Cooking
- In a large skillet over medium heat, melt the butter and sauté the minced garlic until fragrant, around 1 minute.
- Place the seasoned chicken in the butter and sauté each side until golden, about 3-4 minutes per side.
- Toss in the cubed potatoes and stir until well coated in the garlic butter.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is fully cooked and the potatoes are tender.
- Remove from the oven and sprinkle with fresh parsley. Serve hot!
Notes
Don’t overcrowd the pan for even cooking. Use a meat thermometer to ensure chicken reaches 165°F (75°C) for safe consumption. Allow the chicken to rest for a few minutes after baking for juicier meat. Watch the garlic to prevent burning.
