  • 1 teaspoon dried thyme Adds a warm herbal note.
  • 1 teaspoon rosemary Another lovely herbal flavor.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken thighs or breasts with salt, pepper, thyme, and rosemary.
Cooking
  1. In a large skillet over medium heat, melt the butter and sauté the minced garlic until fragrant, around 1 minute.
  2. Place the seasoned chicken in the butter and sauté each side until golden, about 3-4 minutes per side.
  3. Toss in the cubed potatoes and stir until well coated in the garlic butter.
  4. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is fully cooked and the potatoes are tender.
  5. Remove from the oven and sprinkle with fresh parsley. Serve hot!

Notes

Don’t overcrowd the pan for even cooking. Use a meat thermometer to ensure chicken reaches 165°F (75°C) for safe consumption. Allow the chicken to rest for a few minutes after baking for juicier meat. Watch the garlic to prevent burning.
